What I'm doing today...

Ginger snaps. (Recipe in an earlier post.)

Peanut butter cookies.

Preheat oven to 375°F

Sift together and put aside:
1 to 1.5 cups flour
1/2 tsp salt
1/2 tsp baking soda

Beat:
1 stick (4 oz or 1/2 cup) butter
1/2 cup brown sugar
1/2 cup white sugar

Add and beat in:
1 egg
1/2 tsp vanilla

Add and beat in:
1 cup peanut butter (this should measure out to 9 oz, but my cup was a bit overflowing, and it measured out to 10 oz)

Beat in flour mixture.

Roll the dough into small balls, place them on greased cookie sheets, and flatten them with a fork dipped in flour. Bake for 10-12 minutes, cool for 2 minutes, then remove from pan.


Pumpkin nut bread.

Preheat oven to 350°F. Grease and flour two loaf pans.

Mix together:
3 eggs
1 1-lb can of pumpkin
1/2 cup water
1/2 cup oil

Sift the following ingredients together:
2 1/2 cups flour
2 1/4 cups sugar
1 1/2 tsp baking soda
1 1/4 tsp salt
3/4 tsp cinnamon
3/4 tsp nutmeg
1/8 tsp ground cloves
and add them to the pumpkin mixture, beating well.

Stir in (optional):
1 cup chopped walnuts

Divide the batter evenly into the two loaf pans, and bake for 1 hour 15 minutes, or until a toothpick comes out clean when inserted into the loaf.

The kitchen is starting to smell good, at least!
